Even after 20 years of existence next year, Chez Max continues to reinvent itself

Following several months of renovation, the restaurant’s kitchen is now equipped with the latest technologies while maintaining the tradition of homemade dishes. Signature dishes, like the Duck Magret, continue to be prepared with reductions made from meat bones, and the ingredients are sourced from local suppliers.

Modern equipment introduces new cooking techniques, including sous-vide cooking, enhancing flavors and providing significant support to the team of eight talented chefs led by Chef Gerry Thilley.

A Fresh Start for Breakfast

After a few months of adaptation, Chef Gerry Thilley (British, but with French roots, évidemment !) has introduced a varied breakfast for early risers. For the past two months, customers have been able to enjoy Porridge, Yogurt Muesli with Fruit Compote, Scrambled Eggs with Salmon, Eggs Benedict with ham or bacon, and lighter options like a Fresh Croissant, Avocado Toast with dukkah and chili topped with a perfect fried egg. This new service, offered Monday to Friday from 8:00 to 10:15, is already a great success!

Continued Innovation: Brunch at Chez Max

Chez Max continues to innovate with the introduction of brunch on Saturdays (11:00 - 15:30) and Sundays (12:00 - 15:30). This new offering combines breakfast dishes with lunch options, featuring dishes such as Beef Bourguignon, Mussels with Fries, Shrimps with homemade Guacamole, several Salads and Sandwiches, as well as the Breakfast Egg Dishes. To finish beautifully, homemade desserts like Café gourmand are also available.

The Afternoon Menu and French Tapas

From Monday to Friday, 14:00 to 17:00, Chez Max offers an afternoon menu with homemade tapas: Pissaladières, homemade Tapenades, Bayonne Ham Toasts, Goat Cheese and Figs, Chicken Skewers with Lemon Mayonnaise, and classic Cheese and Charcuterie Boards. It’s the perfect opportunity to enjoy light snacks in a friendly atmosphere.

A Friendly and Relaxing Atmosphere

At Chez Max, the family spirit and internal promotion are not just words, but lived realities for those who work there. The Manager of Chez Max, Hugo Becher, shares the same Irish dream as Max, the restaurant owner. Originally from Pau, in the south of France, Hugo came to Ireland three years ago to improve his English. Since then, he has climbed the ranks at Chez Max, going from kitchen porter to waiter, then assistant manager, before becoming manager of Chez Max Palace Street nearly two years ago. Max is more than proud of Hugo’s well-deserved success.

His dedication, love for the restaurant, and constant public relations efforts are key assets for the restaurant. Max even declares with a smile: "Customers now come to see Hugo, the housemaster!" Hugo’s success is a real source of pride for the company and perfectly illustrates Chez Max's family spirit and internal promotion policy.

Additionally, to stay in tune with current trends, Max has promoted his assistant manager, Edgar Rios, to the position of full-time Community Manager. This decision aims to strengthen the connection with the Chez Max community and to organise special events, notably in preparation for the restaurant's 20th anniversary in May 2025.
