Since its inauguration in 2005, Chez Max has managed to establish itself as a must-visit address for French gastronomy in Dublin. Born from the passion of a man from Lozère (ndlr : a region in Southern France), Gonzague de Laloubie, also known as 'Max', for French cuisine, this restaurant has, over the years, charmed the inhabitants of Dublin, and become a real pillar of local gastronomy.

The art of French cuisine in all its splendor

At Chez Max, the menu is a real hymn to traditional French cuisine. Among the dishes that have made the establishment famous, there is the famous Boeuf Bourguignon, prepared in the old-fashioned way and simmered for long hours for unparalleled tenderness and flavor. Moules Frites, an inescapable classic, are also honored, carefully prepared and generously served. To end the meal on a sweet note, nothing better than a Crème Brûlée, whose soft cream contrasts perfectly with the crunch of the thin layer of caramelized sugar. The constant quest for excellence and innovation

Recently, major work was undertaken to triple the size of its kitchen. This ambitious project aimed to modernize the dish preparation space, to make the kitchen more pleasant and efficient for the team in place.

In addition to the kitchen expansion, the Chez Max team has also adopted the sous vide cooking technique, known for its ability to best preserve the flavors and nutrients of food. These material investments reflect Chez Max's desire to stay at the forefront of the latest culinary techniques while respecting traditional French recipes.

A welcoming setting for a memorable gastronomic experience

Outside, the evolution is also visible. The terrace of Chez Max, located at the entrance of Dublin Castle, has been enlarged, with the addition of 25 new tables. This expansion has created an even more welcoming outdoor space, ideal for enjoying beautiful days while savoring a typically French meal.

International recognition for local gastronomy

Chez Max's hard work and passion for French cuisine have recently been rewarded. In February 2023, the restaurant received the "World's French Restaurant" label, thus becoming the first Irish establishment to receive this distinction.

Launched in 2021, the "World's French Restaurant" label is a brand-new initiative aimed at Francophone and Francophile restaurants that celebrate and highlight French cuisine around the world. This label was created under the aegis of the AFMR, the French Association of Master Restaurateurs.
